It was the best of times, it was the worst of times… We all know how it goes on Thanksgiving. Some people eat early and then they fall asleep. Some people eat late and then they fall asleep… While there may be no cure for the sleeping due to the tryptophan, we may be able to reduce the wrenching gut feeling caused from over indulging.
Don’t get me wrong, food and family are the name of the game on Thanksgiving, that is why its so wonderful, but sometimes enough is enough. I know you hate to tell Aunt Hazel you don’t have room for her infamous pie, so this may be the solution. Take the dessert this year, and make it in mini form! Everyone has enough room for these delicious miniature pumpkin pies without most of the guilt or regret.
It’s a super simple recipe and one recipe yields about 35 mini pies! Besides the ingredients, you’ll need a mixing bowl, cooking spray, a 24 cup mini muffin pan (my family calls them tassie pans?), and a round cookie cutter or a glass slightly larger than the opening on the pan. I also used a batter dispenser, which made filling these a breeze!
